The Madeccia Extra Virgin Oil is extracted from cold pressing of olives monocultivar Itrana and exclusively by mechanical processes such as washes, decantation, centrifugation and filtration. The olive harvest is done in the months of November and December. The olives are pressed until 24 hours from the harvest. The Madeccia Oil has a very low percentage of oleic acid, a fruity taste, spicy and an artichoke aftertaste.
